Fatty Acids

The chemistry of fats and fatty acids.


A fatty acid is a carboxylic acid with a long unbranched aliphatic chain, which is either saturated or unsaturated; fats are triesters of glycerol and fatty acids.

Fatty acids are aliphatic monocarboxylic acids with a mostly unbranched carbon chain. The term "fatty acids" is based on the recognition that natural fats and oils consist of the esters of long-chain carboxylic acids with glycerin. From this point of view, fatty acids are also counted as lipids. Subsequently, all other alkyl carboxylic acids and their unsaturated representatives were also assigned to the fatty acids.
